I’m not a lover of mushrooms, but this is so tasty, that after I’ve given my partner all the mushroom, I just gobble this up!
1 4-6oz chicken breast
4-6 white mushrooms whole or halved
1/4c beef of chicken broth (low sodium – I make mine from boiling ground beef or a chicken carcass)
1/2c belle peppers, cleaned and sliced long ways
3-4 small whole shallots with skin removed
Place chicken, mushrooms, peppers, shallots and broth in a pan on high and bring the broth to a simmer, cover the pan and turn the heat down to medium-low and let sit, occasionally stirring & turning the chicken. Simmer until chicken is cooked through. You can serve over brown rich, quinoa or on it’s own. Add 1c of salad topped with balsamic & olive oil for a complete meal.
