OmletteLiving in a clean food only house hold can sometimes be a struggle for the people in my life, but my partner has taken it on full swing.  Last week he came up with this amazing omelet.  Ladies, 2eggs for you!

3 eggs
3tbs almond milk
1/2c diced bell peppers
1/2c diced tomato
1/4c diced onion
1/4c diced mushrooms
1tbs olive oil or Pam spray
1/2 avocado
1c greens
Aged balsamic vinegar

Coat a nonstick pan with PAM or olive oil.  Wisc eggs and almond milk in bowl and pour into pan.  Turn heat down to low.

In another pan cook peppers, onions, tomatoes and mushrooms on med-high heat until cooked.

Fill omelet with filling fold and plate.

Scoop out avocado and dice.  Mix in diced tomato and green and fill empty avocado skin.

Top with a drizzle of balsamic and olive oil.
